Project overview: The project covers an area of 30,000m2. This pig slaughtering cold storage project is a comprehensive slaughtering and processing supporting project integrating the construction of segmented processing workshop, the construction of specialised cold storage, the construction and installation of refrigeration system and the whole process of start-up and commissioning. It aims to pre-cool and discharge acid, split processing, speed Frozen lock fresh and low-temperature warehousing provide a stable and reliable temperature control environment to ensure the quality, safety and shelf life of pork products and meet the production needs of large-scale slaughtering and processing.
Core construction content
1. Dividing processing workshop

The workshop strictly follows the design of food processing hygiene standards and temperature control requirements. The indoor temperature is constantly controlled at 10-15℃, and the humidity is maintained at 75%-80%. The workshop is divided into functional areas such as raw materials to be processed, division operation area, semi-finished product temporary storage area, finished product packaging area, etc., and is equipped with stainless steel division operation table, conveyor line, weighing equipment and cleaning and disinfection facilities. At the same time, it is equipped with an independent refrigeration terminal system to ensure that the temperature in the workshop is uniform and stable, to avoid the breeding of bacteria in pork due to temperature fluctuations during the division process, and to ensure the food safety of the processing process.
2. Pre-cooled acid drain

The pre-cooled acid discharge warehouse is the core facility to improve the tenderness and flavour of pork. The temperature of the warehouse is precisely controlled at 0-4℃, the humidity is maintained at 85%-90%, and the wind speed is controlled at 0.5-1.0m/s. The warehouse adopts a ceiling-type cooling fan to deliver air uniformly, and the supporting track suspension system to realise the suspension pre-cooling of the carcass after slaughter. The design capacity of the acid discharge bank matches the production capacity of the slaughter line, ensuring that the carcass stays in the tank for 12-24 hours, completes the full discharge of acid, and inhibits the reproduction of microorganisms.
3. Quick-freezing warehouse

The quick-freezing warehouse is used for the rapid freezing of pork products after division. The temperature in the warehouse is set to below -30℃, equipped with a high-efficiency low-temperature cooling fan, and the wind speed is controlled at 2-3m/s. Achieve rapid cooling through forced circulation of cold air, ensure that the central temperature of pork drops to -18℃ within 24 hours, minimise the generation of meat cell ice crystals, and preserve the nutrition and taste of pork. Zoned shelves are set up in the warehouse to meet the needs of batch quick-freezing of products with different specifications.
4. Low-temperature storage warehouse

The low-temperature storage warehouse provides a guarantee for the long-term storage of finished pork. The temperature of the warehouse is stable at -18℃, the humidity is controlled at 90%-95%, and the temperature fluctuation does not exceed ±2℃. The warehouse adopts a reasonable airflow organisation design, equipped with a shelf storage system, and the products are stored off the wall and off the ground to ensure that there is no dead angle in the air circulation. At the same time, it is equipped with an automatic temperature and humidity monitoring system to record the environmental data in the library in real time to ensure the stability of product quality during storage.
